It’s tailgating season – not just football, but soccer and rugby too.

I think tailgating is more fun when I can pull off a great menu without wearing myself out before ever getting to the game. And then there is the challenge of presenting it hot and attractively. Here’s my crowd pleasing menu that’s easy to pull off with minimal effort and not a lot of stuff that has to be lugged to the game.

Think Chili, mac’ n cheese and pimento cheese. Each one served on seasoned and toasted Rubschlager cocktail breads. You’ll score points with all of your guests!

Make your favorite chili, mac n cheese and pimento cheese recipes OR purchase them pre-made from the grocery or your favorite restaurant. When I am pressed for time, I get mine from North End BBQ. Their pimento cheese is so good even those who think they don’t like pimento cheese love this one.

The Rubschlager toasts eliminate the need for bowls, utensils and two hands at the tailgate.  And they are also so easy to prep.

Buttered Beer Toasts

Buttered Beer Toasts


  • One beer (your favorite Oktoberfest microbrew)
  • 2 Tbsp melted butter
  • Chili
  • Mac n cheese
  • Pimento cheese


Whisk together beer and two tablespoons of melted butter.

Dredge Rubschlager pumpernickel cocktail bread in the buttered beer sauce.

Place in single layers on a cookie sheet and bake at 350 degrees until crisp.

Flip to the other side after about 10 minutes and continue baking until crisp.

Heat chili, mac n cheese and pimento cheese in serving dish and cover with foil.

Note: I recommend old cast iron skillets for keeping your food warm without the need for cords, electricity and bulky heating equipment. These items don’t have to be hot to be enjoyed – even room temp is great.

Place toasts around the skillet and serve. Guests can use their toast to scoop and enjoy.


You can also spoon chili, mac n cheese and spread pimento cheese onto toasts and place on a platter to serve upon arrival. Guests will appreciate the ease of eating these delectable bite-sized indulgences.

Create a micro-chopped toppings bar for the chili if you wish – guests can spoon items on top of their chili toasts as desired.
