Pineapples are a symbol of hospitality. Turn a pineapple into a Christmas tree by adorning it with small fruit skewers and you have a colorful decoration for any table.
Place a rinsed and dried whole pineapple, complete with green leafy top, upright in the center of a serving plate or platter. Place fruit skewers from top to bottom all over the pineapple in a pattern angling the skewers so that the end result resembles as much as possible the branches of a Christmas tree. For extra emphasis, stick a star on top of the spiky green leaves.
To make the fruit skewers you will need:
At least 24 small wooden skewers (available at any grocery store)
1 fresh, ripe pineapple, peeled and cored, then cut into bite sized cubes or fan-shaped wedges
2 quarts of fresh, ripe whole strawberries, washed and cored
2 pints of fresh, large whole blueberries, rinsed and drained
2 pints of fresh, large whole raspberries, rinsed and drained
Place fruit on the skewer in this order:
pineapple cube, strawberry, blueberry, raspberry, another pineapple cube if there is room and finish with a strawberry.
The order doesn’t really matter. If you are consistent with the order the result is more pleasing to the eye.
