Looking for a light and refreshing way to kick off your holiday meal? Try this Citrus Salmon Salad on Toast for a change of pace. The light citrus contrasts nicely with the savory stuffing and sweet potatoes which will come later in your meal.

Citrus Salmon Salad on Toast


  • 24 slices of Rubschlager cocktail bread. We recommend the pumpernickel, but any of the varieties work well.
  • 12 slices of salmon, sliced very thin
  • 12 caper berries
  • 12 clementine or blood orange segments
  • Red leaf lettuce, washed, dried and torn into 12 toast sized pieces
  • Small Red onion, sliced into small, thin rings. Select 12 of the best-sized rings
  • ½ cup of your favorite citrus vinaigrette.


Toss onion rings and lettuce leaves in vinaigrette. Let sit while making the rest of the components.

Toast Rubschlager cocktail bread by brushing each slice with olive oil and sprinkling with sea salt and black pepper, then place in a single layer on baking sheet and bake in a 350-degree oven for 12-15 minutes until crisp.

Remove bread from oven and let stand for 2-3 minutes.

Toss caper-berries with the lettuce and onion.

Place two slices of salmon in a ribbon fashion on the toast.

Top the salmon with one piece of lettuce, one segment of clementine or blood orange followed by one onion ring and one caper berry.
