The Smorrebrod is a traditional open face Danish sandwich.  Although it is popular all year long, it is especially so on Christmas Day. The sandwich can be made with cheese, meat or fish. This version features flavorful Havarti.

Cheese Smorrebrod

Cheese Smorrebrod


  • 4 slices of Rubschlager Pumpernickel or Rye Bread
  • 1 Tbsp unsalted butter, slightly softened
  • 4 Slices of Danish Havarti Cheese
  • Crushed red pepper
  • 4 sprigs of green onion


Toast the bread and cut it in quarters.

Spread butter evenly on one side of bread.

Top with slices of cheese.

Sprinkle with red pepper.

Garnish with green onion sprigs.
