Artichoke and Cannelloni Spread on Tiny Toast

Add a bit of green and white to your holiday table with this simple and delicious Artichoke and Cannelloni Spread served with Rubschlager cocktail bread. True, this isn’t your typical Thanksgiving fare, but it is a delicious way to start the meal.

Serve these tiny toasts as guest arrive paired with a light, crisp white wine. This little spark of flavor will tease the taste buds and be a lovely contrast to the warm, rich flavors of the traditional holiday meal.

Artichoke and Cannelloni Spread on Tiny Toasts

Ingredients

  • 12 slices of Rubschlager cocktail bread, your choice of rye, sourdough or whole wheat
  • ½ cup extra-virgin olive oil plus extra for drizzling
  • 1 can of small artichoke hearts
  • 1 can cannelloni beans, rinsed and drained
  • 1/2 pound grated Pecorino Romano cheese
  • ½ cup coarsely chopped fresh basil leaves
  • 1 tsp lemon zest
  • 3 tsp fresh lemon juice
  • 2 tsp salt
  • 12 whole small basil leaves for garnish (alternative: use thin lemon slice or both basil and lemon)

Instructions

Prepare toasts in oven while making the topping.

Preheat oven to 350 degrees.

On a baking sheet arrange the bread slices in a single layer.

Using a pastry brush, brush the bread with approximately 1/4 cup oil.

Bake until bread is golden and crisp, about 12 to 15 minutes.

In a food processor combine the artichoke hearts, beans, cheese, basil, lemon zest, lemon juice, salt, and pepper.

Pulse until the mixture is chunky or coarsely chopped.

With the machine running slowly add the remaining olive oil and pulse a bit more to incorporate oil. 

Note: This process may also be done with a fork to maintain more of the identity of the beans and artichoke. Or, use the food processor until spread is almost smooth.   

Spoon the artichoke mixture onto the toasts.

Drizzle sparingly with olive oil, if desired, and garnish with basil leaf or lemon slice
